avocado

carrots

scallions
1 clove
garlic clove
1 inch
ginger root
1 tablespoon
canola oil
2 tablespoons
lime juice
Seeds of 1/2
pomegranate
salt & pepper
Directions
- Peel, pit and slice the mangos and avocado.
- Peel the carrots, if needed, and slice as thinly as possible.
- Trim and slice the scallions.
- Peel and crush the garlic.
- Peel and shred the ginger.
- Combine the oil and lime juice, and mix in the shredded garlic and ginger.
- Put all of the ingredients into a large serving bowl and toss well to combine. Season and serve immediately.
