Meat Loaf with Fresh Basil Serves 4 – 6

Ingredients

  • 1 side (a ‘cheek’) of a bell pepper (red, yellow, or orange)
  • 1/8 red onion, chopped
  • 4 baby carrots or a 2 inch piece of a large carrot
  • 2 cloves garlic
  • 1 large egg
  • 1/2 – 1 cup Panko bread crumbs (whole grain)
  • 1 tablespoon dry oregano
  • 3/4 cup fresh basil, chopped or 1 tablespoon dried
  • 1/4 cup Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1 pound ground turkey
  • 2 cups tomato sauce

Directions

Preheat oven to 375°.

In a food processor, combine peppers through egg. Pulse to get rid of large pieces. Mixture should have a fine texture. In a large bowl combine the vegetable mixture with the next 6 ingredients (through lean ground turkey). Divide meat mixture into 4 equal pieces. Form into even balls and place in a baking dish. Bake uncovered for 30 – 45 minutes or until a thermometer registers 160°. Let stand 10 minutes before slicing. Top with warmed tomato sauce
