Tuna Salad

Ingredients

  • 12 oz of tuna, packed in water, drained
  • 1/4 cup diced celery
  • 1/4 cup red onion, diced
  • 1/4 cup dried cranberries
  • 1/4 cup apple, skin on, diced
  • 2 tablespoons reduced-fat mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 teaspoons whole grain mustard
  • 2 tablespoons fresh parsley, chopped

Directions

Combine all ingredients in a bowl. Serve in a pita pocket or on whole grain bread with one slice of sharp cheddar cheese and some greens.
