Summer Grain SaladYields 8 servings

Ingredients

  • 4 cups cooked quinoa¹ or whole grain couscous
  • 2 breasts of left-over cooked chicken, diced
  • 1/2 cup diced red onion
  • 1 cup chopped bell peppers (use red, orange, or yellow)
  • 1 cup diced radishes
  • 1 cup halved cherry tomatoes
  • 1 cup black beans
  • 1 cup grilled or fresh corn kernels
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • Juice of one lime
  • 1 teaspoon ground cumin
  • 1/4 cup chopped parsley (or cilantro)
  • Salt and pepper to taste

Directions

Mix all ingredients together in a bowl and serve.

¹To cook quinoa: Rinse quinoa well. Combine one part quinoa with two parts water in a saucepan. Bring to a boil, then cover. Reduce heat and simmer for 15 – 20 minutes.
