
Sausage and Pepper SandwichesServes 8
Ingredients
- 2 tablespoons olive oil
- Olive oil spray
- 8 Italian chicken sausage links
- 2 red bell peppers
- 1 yellow onion, thinly sliced
- 1 pint cherry tomatoes
- 6 – 8 multigrain sandwich rolls
- 2 tablespoons fresh basil, sliced
- Salt and pepper
Directions
Preheat oven to 450°. Coat a baking dish with olive oil spray. In a single layer, spread the tomatoes onto baking dish. Roast for 20 minutes or until browned and burst open.
While tomatoes are roasting, char the peppers on a grill or over an open flame. Once blackened on all sides place the peppers in a paper bag to steam. After 10 minutes or once peppers have cooled, remove the skin and seeds and slice the peppers.
Once tomatoes and peppers are cooked and prepped, heat 1 tablespoon of the oil in a skillet over medium heat. Add the sausages and cook, turning until browned on all sides and partially cooked. Remove from pan, slice into 1-inch coins and set aside.
Heat the remaining oil in another skillet over medium-low heat. Add onion (season with salt). Cook until softened and golden, 10 – 12 minutes. Add the sausage, tomatoes, and peppers (with their juices) to the onions and cook over medium-low heat for 5 – 10 minutes to completely cook the sausage and incorporate the flavors. Toss with fresh basil and serve on rolls.
