Roasted Pepper Stuffed Chicken Breasts4 servings
Ingredients
- 1 – 2 large roasted red peppers, halved (homemade or packed in water)
- 2 ounces goat cheese
- 4 teaspoons pesto
- 2 teaspoons olive oil, divided
- 4 (4-ounce) boneless, skinless chicken breasts
Directions
Cut a horizontal slit through thickest portion of each breast half to form a pocket.
Spread 1 teaspoon of pesto into each chicken pocket. Stuff each chicken breast with 1/2 ounce goat cheese and a few slices of roasted pepper.
Heat 1 teaspoon oil in a large non-stick skillet over medium heat. Add chicken; sauté 6 minutes on each side or until chicken is done.
