
Chicken Sausage with Kale & White beansYield 4 servings
Ingredients
- 4 links of chicken sausage
- 2 cups canned Cannellini or white beans (can be dried and cooked instead of canned)
- 2 tablespoons extra-virgin olive oil
- 1 clove garlic, chopped
- 1 bunch of kale, washed, dried and chopped
- 1/2 teaspoon chili flakes
- 1 cup cherry tomatoes (halved)
- Salt and freshly ground black pepper
- 1 tbsp fresh chopped basil
Directions
Heat 1 tbsp oil in a large skillet over high heat. Add the chicken sausage. Cook for 2 – 3 minutes per side and remove from pan, slice 1 inch thick. Reduce heat to medium high, add chicken sausage back to pan with remaining olive oil and kale. Cook for 2 – 3 minutes to wilt kale. Add garlic, red pepper flakes, white beans and tomato. Season with salt and pepper. Cook 2 – 3 minutes until chicken sausage is cooked through and flavors incorporate. Toss with fresh basil and serve.
